This is my 5 minute salad recipe, yes I timed it and it truly is quick and easy. I eat this for lunch regularly, even dinner sometimes and I lose 0.6 kg weekly along with exercise. I have never been a big salad eater so I had to find ways to make it something I would enjoy eating but also quick and efficient because I work in a call centre. You can always play around with the ingredients, adding chicken is also really tasty.
WHAT YOU NEED:
- Lettuce
- Piccoli Tomatoes, the baby ones.
- Red/Yellow Pepper (optional)
- Pickled Cornichons with Chilli, You can get this from Lidl or any other pickles but this one gives it that sweet little kick.
- Cheddar Cheese
- Roasted Cashew Nuts
- Balsamic Vinegar
- Chia Seeds
- Roasted Sesame seeds
INSTRUCTIONS:
- In a bowl shred 2 Lettuce leaves, place 4 baby picollo tomatoes in and give it a good rinse.
- Cut the baby tomatoes in halves.
- Cut a thick slice of cheese and crumble it into your salad, cheese tastes so much better than feta.
- Add 1/4 cups of roasted cashew nuts, sounds unusual to some but trust me its so good.
- Dice some Pickled Cornichons with Chilli, depends on your preference when it comes to how much but I generally use about 2-3 small ones,
- If you enjoy red pepper, you can add some in, although I prefer it without.
- Add 1 Tsp Chia seeds, 1/2Tsp roasted sesame seeds, a sprinkle of salt and just a little but of pepper.
- This is what brings it all together for me, the balsamic vinegar. You only need a dash, but you can adjust the amount to your liking.
- Give it a good old mix and enjoy 😉
